Sometimes you just want to grab an unhealthy bounty or twix bar. There’s nothing wrong with that!! And I’m not going to tell you to banish them out of your life. Every now and then you need to enjoy a delicious unhealthy treat. But.. in moderation of course.

To enjoy these delicious sweet treats a little bit more often I made a healthy version of a bounty: vegan bounty bars. More natural ingredients and less refined sugars. Of course it’s not similar as the original bounty bar, but… after having 1 piece I couldn’t resist them anymore. Delicious!! Perfect to serve with a tea or coffee, or just as a delicious little sweet snack in between.

INGREDIENTS

  • 60 gr grated coconut
  • 20 gr coconut flour
  • 20 gr rice flour
  • 2 tsp coconut oil
  • 2 tbsp honey/ maple syrup
  • 10 gr dark (85%) chocolate

PREPARATION

Put the grated coconut, honey, coconut flour, rice flour and 1 tsp melted coconut oil in a bowl. Stir well and a few tablespoons of water to make it more sticky. Line your oven tray with baking paper and pour in the coconut mixture. Press it firmly, otherwise the bars will fall apart when you are going to cut them. Let it set in the freezer for at least 30 minutes.

Cut the chocolate roughly. Put it in a small bowl together with the remaining coconut oil. Put it the microwave for about 15 seconds. Stir till all the chocolate is melted. Divide the melted chocolate over the coconut mixture and put it in the freezer again for at least 15 minutes. Cut it in bars and your bounty is ready to eat!
