This lovely fresh fennel salmon salad only contains 5 ingredients!! And that means less and quick groceries, but still a delicious salad with good flavors. Perfect on a warm summer day or as a side dish at a barbecue.

Fennel is probably not the first veggie you think of when making a salad. And that’s a shame! Fennel is a delicious fresh and aromatic veggie with a hint of anise. You can eat it raw, just like in this recipe, but also delicious when it’s cooked. In the oven or pan with some fresh herbs, lemon and olive oil, yumm!! Do not only use the fennel bulb, but also the herbs that grow on top of it (if it’s still on it).

INGREDIENTS

  • 1 fennel bulb
  • 8 radishes
  • 120 gr fresh salmon
  • 1 lemon
  • fresh dill

PREPARATION

Put the frying pan on a heat. Season the salmon with salt, pepper, dill and lemon zest. Bake the salmon on a medium heat for about 3 minutes on each side (depending on the thickness of your salmon filet).

Personally, I like my salmon slightly pink on the inside. Would you like it completely cooked? Bake it a few minutes longer. 

Meanwhile, cut the fennel in slices (remove the though middle part). Also slice the radishes and put it in a bowl together with the fennel. Add the juice of 1/2 lemon and (optional) a drizzle of olive oil. Season with salt, pepper and fresh dill. Tear the salmon in chunks and spread them over the salad.
