Oh I love to make cakes! Not only because baking is fun, but also because a cake is very versatile. Indeed, it is the perfect breakfast, gives you a lot of energy and it gives you a full feeling for a longer period. This berry breakfast cake is also perfect as a snack or as an energy boost before your workout.

For this cake I used different types of flour. Just because I love to combine these together. If you don’t have all these types of flour at home, or if you don’t want to buy so many different types, no problem! You can just use 2 types of flour if you want, for example grounded oats and buckwheat flour. Or try with another type of flour you like, for example rye flour.

 

PREPARATION

Preheat the oven to 170 degrees celsius.

Put all the dry ingredients (flour and baking powder) in a bowl en stir well. In another bowl, mash the banana with a fork and add the eggs, vanilla extract, almond milk and stevia and mix well. Pour the liquid mixture into the flour mixture en stir until you have a smooth batter. Add the berries and fold carefully through the batter.

Line the cake tin with baking paper. Pour in the batter and put in the oven for about 60 minutes.

Tip: can’t you eat the cake in 1 day? No problem! Cut the cake in portions and freeze in. Take out of the freezer in the morning and you have a perfect snack at work!

  • 1 ripe banana
  • 4 eggs
  • 80 gr buckwheat flour
  • 120 gr grounded oats
  • 40 gr almond flour
  • 40 gr coconut flour
  • 2 tsp vanilla extract
  • 3 tsp baking powder
  • 100 ml almond milk
  • 100 gr berries
  • 6 stevia drops
